Here at Bubba Pie, we are always looking for fun new side dishes. While the main course is often what attracts us to a particular meal, I’ve often found myself actually enjoying the sides just as much, if not more! There is a really nice restaurant in our city that serves the BEST sides! I can never decide which one to choose because they are all so good! So, we’ve got some awesome side dishes on here. One of my favorites is this Skillet Loaded Cream Cheese Corn Recipe. Or the Rotini Pasta Salad is a fun and light side dish for just about any occasion.

When we find a new and fun recipe for a cool side dish, we are really excited to share them with you on here. This brings me to our newest side dish recipe: Roasted Korean Sweet Potatoes.

What Is a Korean Sweet Potato?

Korean Sweet Potatoes are much like their American counterparts. They look alot alike, but not totally! See the picture above. The differences are that they should be a little more dense and have a sweeter flavor than your regular Sweet Potato. And they almost have the texture of a water chestnut.

Not only are they delicious! Korean Sweet Potatoes are also full of nutritional benefits. From Antioxidants to Vital Vitamins and Minerals, these fiber rich root vegetables can be an important part of a healthy diet!

Where Can You Buy A Korean Sweet Potato?

You CAN often find them at your local store (we found ours there) but you may need to go to an Asian market to grab some. But they are totally worth it. Making these candied Korean Sweet Potatoes (also called goguma-mattang) is something I will certainly do again. They make a KILLER side dish but could also even work as a dessert!

Korean Sweet Potato Recipe

In addition to your Korean Sweet Potatoes, you just need a handful of ingredients and you are on your way!

Korean Sweet Potato Ingredients:

  • Asian sweet potatoes, peeled and cut into 1/2′ cubes
  • vegetable oil, divided
  • white sugar
  • water
  • soy sauce
  • sesame seeds for garnish

Korean Sweet Potato Instructions:

  1. Preheat oven to 425 and grease a baking sheet with nonstick cooking spray.

  3. In a mixing bowl, combine potatoes and 2 tablespoons vegetable oil. Mix well to evenly coat.
  4. Spread onto prepared baking sheet in a single layer. Bake for 20-25 minutes, flipping once halfway through. When potatoes are baking, make sauce.Korean Sweet Potato Recipe - BubbaPie (5)
  5. In a large skillet, add sugar, water, 1 tablespoon oil and soy sauce. Heat over medium heat, stirring constantly until boiling.Korean Sweet Potato Recipe - BubbaPie (6)
  6. Once boiling, reduce heat to medium and continue to boil. The bubbles will be like fizz from a can of co*ke. Continue to boil for 4-6 minutes, stirring constantly until liquid is reduced in half. Remove from heat.Korean Sweet Potato Recipe - BubbaPie (7)
  7. Stir in potatoes and serve topped with sesame seeds.

Can You Sub Regular Sweet Potatoes for Korean Sweet Potatoes?

If you absolutely have to, you can use regular Sweet Potatoes for this dish, but they just won’t be quite as sweet.

How To Store Leftover Korean Sweet Potatoes

You can store leftover Korean Sweet Potatoes in an airtight container in your refrigerator. They should stay good for about 3 days. They reheat just fine in your microwave, but you can also reheat them in the oven for about 5 minutes at 350 degrees.

Other Notes and Tips

Also, I’m not sure if this was just me, since this was the first time I’d used Korean Potatoes, but they seemed to brown pretty quickly once I skinned them. So, just be ready for the rest of your recipe once you begin to peel and chop them! And, like all potatoes, make sure that you wash them before you use them. But wait to wash them until you are ready to cook your recipe. The moisture can induce sprouting if you let them sit too long!

Some people like to sprinkle Korean Sweet Potatoes with a little salt. We didn’t do this but it can be a nice balance with the sweetness of the potatoes.

  • 1 lb Asian sweet potatoes peeled and cut into 1/2′ cubes
  • 3 tablespoons vegetable oil divided

  • 1/2 teaspoon soy sauce
  • sesame seeds for garnish

Instructions
